Digital note-taking services are more popular than ever, for good reason. With baked-in cloud support, these apps prove to be more convenient than ever, allowing you to access and create notes from any device you own, from anywhere in the world.

That convenience comes with a risk: Many note-taking apps include telemetry, or in some instances, may even "anonymously" access your notes, using them to train AI models or to "optimize service delivery." A lot of note apps are subscription based, making it hard to export your notes.
